BBQ Chicken Skewers
If you're looking for a quick, easy recipe to make for warm summer nights on the patio, this is it. The best part is, you can mix and match what goes on each skewer to match everyone's preferences! Pair them with a side of guacamole, salad, or roasted potatoes.
Ingredients
Skewers:
- 2 large chicken breasts
- 1 large cob of corn
- 1/2 red onion
- 1 red pepper
- 1 yellow pepper
Marinade:
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 garlic cloves (crushed)
- 1 tsp dried rosemary OR 2 sprigs fresh rosemary
- 1/2 Tbsp minced ginger
- 1 Tbsp worcestershire sauce
- 1 Tbsp maple syrup
Method:
Start by soaking wood skewers for 2-3 hours to keep from burning on the grill. Next, add all marinade ingredients into a large bowl and whisk together. Cut up the chicken breasts into 1" cubes and toss in the marinade. Let the chicken marinate for 2-3 hours either in the bowl, or in a large ziploc bag. Chop up the corn into 1" wide slices and soak those for 30-60 minutes to soften the husks to make it easier to assemble the skewers.
Cut up the peppers and red onion into large chunks and start assembling the skewers. Grill on the BBQ on medium heat for about 10 minutes turning every 3-4 minutes. Season with salt and pepper to taste and enjoy!
