Eggnog Scones

Eggnog is something I look forward to every Christmas season. It is such a fun treat - on it's own, in coffee, or in baking. For the second recipe that I created for the Wild For You advent calendar, I knew I wanted to incorporate eggnog and I thought scones would be a great way to do that. These scones have subtle hints of eggnog, cinnamon and nutmeg - and they are absolutely delicious! I hope you enjoy them.




Ingredients


Scones

- 2 cups flour

- 1/2 cup sugar

- 2 tsp baking powder

- 1 tsp nutmeg

- 1/2 tsp cinnamon

- 1/2 cup cold butter

- 3/4 cup eggnog

- 1 tsp vanilla


Icing

- 1/2 cup eggnog

- 1 1/2 cup icing sugar


Method


Preheat oven to 400ºF and line a cookie sheet with parchment paper.


In a large bowl, mix flour, sugar, baking powder, nutmeg and cinnamon. Cut in the cold butter using a pastry blender until the texture resembles oatmeal.


Next, add the eggnog and vanilla, and mix until just combined. The dough maybe appear to be a bit crumbly. Using your hands, form the dough into a large circle about 1.5 inches thick. Cut the dough into 8 even pie-like slices and spread out in the baking sheet. Bake for 15-18 minutes, or until the edges are golden.


While the scones are baking, make the icing by whisking the remaining eggnog and icing sugar until smooth. Once the scones are cooled, dip the scones into the icing, or drizzle it on top and enjoy!
