Peppermint Brownies
During the Christmas season, is there any better flavour combination than peppermint and chocolate? Whether it's a peppermint mocha an After Eight, you really can't go wrong. When Wild For You asked me to team up with them to create recipes to accompany their Advent calendar - peppermint brownies came to mind right away. They are soft a gooey with the perfect balance of mint and chocolate! I hope you love them as much as I do.
Ingredients
- 3/4 cup butter
- 1/2 cup cocoa
- 1 cup sugar
- 3/4 cup flour
- 2 eggs
- 1 tsp salt
- 1 tsp vanilla
- 1/2 tsp peppermint extract
- 16 After Eight squares
- 1/4 cup chocolate chips
- 1 candy cane, crushed
Method
Preheat the oven to 350ºF. Grease a 9x9 inch baking pan and set aside.
In a microwave safe bowl, melt the butter and stir in the cocoa powder until smooth.
In a large mixing bowl, add the flour, sugar, salt and eggs. Then add the butter and cocoa mixture and combine. Next, add the vanilla and peppermint extract and mix until the batter is smooth and all of the ingredients are evenly combined. The batter will be quite thick, almost dough like.
Spread half of the batter into the pan and then place the After Eights flat across the pan. Spread the remaining batter over top. Top with chocolate chips and crushed candy cane. Bake for 25-30 minutes and enjoy!
