Piña Colada Chia Pudding

During this heat wave, anything cool and refreshing is an absolute must. This chia pudding is the perfect breakfast or snack to make you feel like you're sitting sea side. It's so easy to quickly whip up, and the best part is - it's healthy too!


Chia seeds are a great source of omega-3's, fibre, and protein! This will help you feel full longer, and along with the other ingredients in this recipe, provide many key micronutrients to help your body operate at it's best. This recipe only requires five ingredients, and can be mixed up in a single bowl.




Ingredients


- 1 cup coconut Greek yogurt

- 1/2 cup pineapple juice

- 1 can of crushed pineapple (400mL)

- 1 small can (160mL or about 3/4 cup) coconut milk

- 1/2 cup chia seeds

- 2 Tbsp shredded coconut *optional*



Method


Pour yogurt and coconut milk into a large bowl and whisk together until there are no lumps. Next, add the pineapple juice and continue to whisk. Add a bit more than half of the can of pineapple and any extra juice from the can and combine. Finally, add the chia seeds and mix until they are evenly mixed throughout.


Pour the pudding into glass jars and top with the remaining pineapple and shredded coconut. Seal or cover the jars and leave in the fridge overnight. Pull them out in the morning for an easy breakfast and enjoy!



These can stay sealed in the fridge for 3-4 days.
