Prosciutto Arugula Pizza with Fresh Peaches
This pizza is perfect for the summer. I personally love a pizza that doesn't have any tomato sauce, so this twist on my go-to Famoso order completely hits the spot. Now if you don't love fruit on pizza, the peaches are completely optional, but I will say that the sweetness from the peach compliments the saltiness of the prosciutto perfectly.
For the crust, you can use your favourite recipe or pre-made crust. I used a homemade sourdough crust that was SO delicious! The recipe I used gives enough dough to make two individual pizzas, or one large pizza.
Make sure when adding the toppings that you wait until after it bakes to add the arugula, parmesan, lemon juice and peaches. I hope you enjoy this recipe!
Ingredients
- Pizza dough for one large pizza
- 2 Tbsp olive oil
- 2 cups mozzarella cheese, grated
- 10 slices of prosciutto
- 2 cups fresh arugula
- 2 Tbsp parmesan cheese, grated
- 1-2 lemon wedges
- 1 peach, sliced thin *optional
Method
Preheat the oven to 450ºF. Spread the pizza dough evenly onto a pizza pan and then drizzle 1 Tbsp of olive oil onto the dough and spread over the dough with the back of a spoon. Next, spread the mozzarella out so that it covers the pizza completely. Spread the prosciutto out on the pizza so that each pizza slice will have it's own piece of prosciutto on it. Brush the crust lightly with the remaining olive oil and then bake in the oven for 12-15 minutes or until the crust and cheese are golden brown.
After you take the pizza out of the oven, spread out the arugula over the pizza and then top it with a sprinkle of parmesan cheese and a squeeze of fresh lemon juice. Then, if you wish, top the pizza with the sliced peaches. I liked to have one large piece per slice of pizza, but feel free to add as much or as little as you like. Cut the pizza into slices and enjoy!
