Pulled Chicken Burrito Bowl

Fresh, flavourful, delicious. Three words that sum up this recipe! The best part about this recipe is that it is so easy to modify to make it your own. This recipe includes simple ingredients that you probably already have in your kitchen! Follow along:


Ingredients:

  • 4 medium chicken breasts

  • 2 tsp taco seasoning

  • 2 tsp cumin

  • 1 tsp chili powder

  • 1/2 tsp salt

  • 1 lime

  • 1/4 cup water

  • 4 cups cooked rice

  • 1 red pepper

  • 1/2 can of corn

  • 1/2 can black beans

  • 1/4 red onion

  • 1 avocado

  • 2 cups lettuce

  • 1 cup grated cheese

  • 4 Tbsp sour cream

Method


Pulled Chicken


First, mix taco seasoning, cumin, chili powder, salt and lime juice into a paste. Rub on raw chicken breasts and cook in a greased skillet. If there is any excess spice mixture, add it to the skillet. Cook the full chicken breasts on medium heat, flipping regularly. Once cooked, take two forks and start pulling apart the chicken until the entire pan is shredded. Then add water and continue stirring until water has cooked off. It is now ready to add to the bowl!




Burrito Bowl


Once chicken is cooked, use another frying pan to heat beans, corn, sliced peppers, and chopped red onion. Once warmed, top rice with chicken, bean mixture, lettuce, avocado, cheese and sour cream! Mix it up with your fork and enjoy!

This recipe would also taste great with some modifications like a quinoa base, salsa or diced tomato and cilantro!
