Salmon Tacos

I wanted to share a fun taco recipe that is great for keeping the summery vibes in your kitchen even as we are in the dead of winter. This recipe makes 6 small tacos, but feel free to half or double this recipe as needed!



Salmon Glaze


Ingredients:

- 2 tsp of olive oil

- Juice of 1 lime (about 3-4 tsp)

- 1 tsp tsp onion powder

- 1/2 tsp cumin

- 1/2 tsp chili powder

- 1/2 tsp salt

- 1/2 tsp garlic powder

- 2 x 6oz salmon filets


Method:

Preheat oven to 400 degrees Fahrenheit. Mix all ingredients except salmon in a mixing bowl until it's a smooth paste. Paint the glaze onto the salmon filet and put into the oven for 12-15 minutes.


Tacos


Ingredients:

-1 avocado, cubed

-1/2 mango, cubed

-1/4 cup chopped red onion

-1/4 cup chopped red bell pepper

-1/2 jalapeño *optional*

-1 tsp lime juice

-1/2 cup chopped red cabbage

-1/4 cup feta cheese

-6 tsp alfalfa sprouts

-12 oz salmon - glazed and baked

-6 mini flour tortillas


Method:

In a medium bowl, combine avocado, mango, red onion, red pepper, jalapeño (if using), and lime juice to create a mango salsa. Using a fork to flake salmon into medium pieces, start filling each tacos with equal amounts. Next, top the salmon with mango salsa, chopped red cabbage, feta cheese, and alfalfa sprouts. Garnish with any leftover lime juice and enjoy!
