White Chocolate Cranberry Shortbread Biscuits

Ingredients
- 1 3/4 cup flour - 2/3 cup sugar - 1/4 tsp salt - 1/2 tsp cinnamon - 1 tsp nutmeg - 1 tsp vanilla - 1 cup butter, room temperature - 1/4 cup dried cranberries - 1/4 cup white chocolate chips - 1/2 tsp coconut oil
Method
Preheat the oven to 350ºF. In a large bowl, mix together flour, sugar, salt, cinnamon and nutmeg. Cut up butter into cubes and add to the dry ingredients. Using a pastry blender, cut in the butter until the butter pieces are about the size of a pea. Add the vanilla and continue to combine. It may be helpful to mix the dough even further with your hands. It should stick together when pressed, but won't all come together into one ball. Next, chop up the dried cranberries and mix them into the dough evenly. Line an 8x8 inch pan and press the dough evenly into the pan using the back of a spoon. Bake for 30 minutes. Once the biscuits have cooled completely, heat up the white chocolate chips and coconut oil for about 30 seconds in the microwave or until the chocolate is completely liquid. Then using a spoon, drizzle the chocolate on top of the biscuits. Once it dries, cut up the biscuits and enjoy!
